Description

A delicious recipe for beef enchiladas with a rich enchilada sauce, cheese, and fresh toppings.


Ingredients

  • 1 lb ground beef (80/20 blend)
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1 can (16 oz) refried beans
  • 1 can (10 oz) red enchilada sauce
  • 6 large flour tortillas (about 10″ diameter)
  • 2 cups shredded cheese (Monterey Jack and cheddar blend)
  • 1/2 cup diced white onions
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brown the ground beef in a skillet over medium heat, breaking it up until no pink remains (about 5-7 minutes).
  3. Drain excess grease, leaving a teaspoon for flavor. Stir in taco seasoning with 3/4 cup water and simmer for 5 minutes.
  4. Warm refried beans in another pan until spreadable.
  5. Spread 2 tablespoons of beans on each tortilla, add beef mixture, sprinkle with cheese, roll tightly, and place seam-side down in a baking dish.
  6. Pour enchilada sauce over the rolled enchiritos and sprinkle with remaining cheese.
  7. Bake for 20 minutes until cheese is melted and bubbly.
  8. Let rest for 5 minutes, then garnish with fresh onions and cilantro before serving.

Notes

  • For a homemade taco seasoning, mix chili powder, cumin, garlic powder, onion powder, and paprika.
