This slow cooker turkey and potatoes recipe is perfect for a comforting meal.


Ingredients

  • 2 lbs boneless, skinless turkey breast (Can substitute with chicken breast or thigh.)
  • 4 medium potatoes, peeled and diced (Cut into larger chunks to avoid mushiness.)
  • 2 cups low-sodium chicken broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste salt and pepper (Season to preference.)
  • 2 tablespoons olive oil (For searing the turkey, optional.)
  • Fresh parsley, for garnish (optional)

Instructions

  1. Begin by peeling and dicing the potatoes, chopping the onion, and mincing the garlic. Set these aside.
  2. For an extra layer of flavor, heat olive oil in a skillet over medium-high heat. Sear the turkey breast for about 4-5 minutes on each side until golden brown (optional).
  3. In the slow cooker, add the potatoes first, followed by the chopped onions and minced garlic. Place the turkey breast on top, then season generously with salt, pepper, thyme, and rosemary.
  4. Pour the low-sodium chicken broth over the turkey and potatoes, making sure everything is well-coated.
  5. Cover the slow cooker and set it to low for 6-7 hours or high for 3-4 hours.
  6. Once cooked, shred the turkey with two forks and mix gently with the potatoes and broth. Garnish with fresh parsley before serving.
