Description

Delicious chocolate chip muffins perfect for breakfast or a snack.


Ingredients

  • 1 ½ cups ALL-PURPOSE FLOUR
  • 1 cup ROLLED OATS
  • ½ cup GRANULATED SUGAR
  • 2 teaspoons BAKING POWDER
  • ½ teaspoon BAKING SODA
  • ½ teaspoon SALT
  • 1 large EGG
  • 1 cup MILK
  • ¼ cup VEGETABLE OIL or MELTED BUTTER
  • 1 teaspoon VANILLA EXTRACT
  • ¾ cup CHOCOLATE CHIPS

Instructions

  1. Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease it.
  2. In a large bowl, whisk together the flour, rolled oats, sugar, baking powder, baking soda, and salt.
  3. In a medium bowl, whisk together the egg, milk, oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined, with a few lumps.
  5. Fold in the chocolate chips until evenly distributed.
  6. Fill each muffin cup about ¾ full with the batter.
  7. Bake for 18-22 minutes or until a toothpick inserted comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
