- 2 teaspoons instant yeast
- 1 cup warm water (110°F)
- 2 tablespoons granulated sugar
- 2 cups all-purpose flour
- 1 teaspoon salt
- 0 cup baking soda

Instructions
- In a bowl, combine warm water, sugar, and yeast. Allow it to sit for about 5 minutes until frothy.
- In a large mixing bowl, combine flour and salt. Add the yeast mixture and stir until a dough forms.
- Sprinkle some flour on a clean surface. Knead the dough for about 5 minutes until it becomes smooth and elastic.
- Form the dough into a ball and place it in a greased bowl. Cover with a damp cloth and let it rise in a warm area for approximately 30 minutes, or until it doubles in size.
- In a large pot, bring 4 cups of water to a gentle boil and add the baking soda.
- After the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope (about 24 inches), then shape it into a pretzel knot.
- Carefully drop each pretzel into the boiling baking soda bath for about 30 seconds. Remove with a slotted spoon and place on a baking sheet lined with parchment paper.
- Brush the tops with melted butter (if using) and sprinkle with coarse salt. Bake in a preheated oven at 425°F (220°C) for 12-15 minutes, until golden brown.
- Allow your pretzels to cool on a wire rack before indulging in this hot, soft goodness.
