A delicious recipe for cheesy scalloped potatoes, perfect for any occasion.

- 3 pounds russet potatoes
- 1 cup heavy cream
- 1 cup milk
- 4 tablespoons butter
- 3 tablespoons all-purpose flour
- 2 cloves garlic, minced
- 1 medium white onion, diced
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup grated parmesan cheese
- 1 1/2 teaspoons salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh chopped parsley (optional garnish)
Instructions
- Peel and thinly slice the russet potatoes; place in cold water to prevent browning.
- In a saucepan, melt butter over medium heat. Add diced onions and minced garlic; sauté until soft.
- Stir in flour and cook for 1-2 minutes to make a roux. Gradually whisk in milk and cream.
- Cook the sauce until it thickens. Stir in salt, pepper, 1/2 cup cheddar, and 1/4 cup parmesan.
- Drain and pat dry the potatoes. Layer them in a greased baking dish and pour over the cream sauce. Repeat layers.
- Top with remaining cheddar and parmesan. Cover with foil and bake at 375°F for 40 minutes.
- Remove foil and bake an additional 20-25 minutes until golden and bubbling.
- Let rest for 10-15 minutes. Garnish with parsley if using.
Notes
- This dish can be prepared ahead of time and baked just before serving.
- For a twist, add cooked bacon or ham between the layers of potatoes.
