Description

A hearty and healthy lentil mushroom stew that is perfect for any occasion.


Ingredients

  • 2 cups lentils
  • 1 cup mushrooms, chopped
  • 1 onion, diced
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, and garlic; sauté for 5-7 minutes until softened and fragrant.
  2. Add chopped mushrooms and cook for 4-5 minutes until tender.
  3. Add lentils, diced tomatoes, vegetable broth, thyme, cumin, and season with salt and pepper. Stir well.
  4. Bring the mixture to a boil, then reduce heat and let simmer for 30-40 minutes until lentils are tender.
  5. Taste and adjust seasonings as needed.
  6. Serve warm, topped with fresh herbs or nutritional yeast if desired.

Notes

  • This stew can be stored in the refrigerator for up to 5 days.
  • For a thicker consistency, blend a portion of the stew and stir it back in.
