Description

A delicious and easy one-pan meal featuring ground turkey, rice, and colorful veggies.


Ingredients

  • 1 lb ground turkey
  • 1 cup long-grain white rice
  • 2 tsp taco seasoning
  • 1 cup bell peppers, chopped (mixed colors)
  • 1 medium onion, finely chopped
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 2 tbsp fresh cilantro, chopped

Instructions

  1. Cook the rice according to package instructions; set aside.
  2. In a large skillet over medium heat, heat a splash of olive oil. Sauté chopped onions and bell peppers until softened, about 5 minutes.
  3. Add ground turkey and cook until browned, breaking it apart as it cooks—about 7 minutes.
  4. Stir in taco seasoning, diced tomatoes (with juices), and black beans; simmer for 5 minutes.
  5. Fold in the cooked rice until well combined and heated through.
  6. Remove from heat; top with shredded cheddar cheese and cover briefly to melt.
  7. Garnish with cilantro before serving.
