- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 2 tablespoons granulated sugar
- 1/2 teaspoon salt
- 2 large eggs
- 1 3/4 cups milk
- 1/3 cup unsalted butter, melted

- 8 ounces cream cheese, softened
- 1/3 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup heavy cream
- 2 cups fresh strawberries, sliced
- 2 tablespoons sugar
- 1 tablespoon lemon juice
Instructions
- In a mixing bowl, whisk together the flour, baking powder, sugar, and salt.
- In a separate bowl, combine the eggs, milk, melted butter, and vanilla.
- Pour the wet mixture into the dry ingredients and mix until just combined. Let the batter rest.
- In another bowl, beat the cream cheese until smooth.
- Add powdered sugar and vanilla to the cream cheese, and mix until fluffy.
- Slowly pour in the heavy cream and beat until light and spreadable. Refrigerate the filling until use.
- Heat a waffle maker and lightly grease it.
- Pour the batter into the waffle iron and cook until golden and crisp. Repeat with remaining batter.
- In a small saucepan, combine strawberries, sugar, and lemon juice. Cook on medium heat for 5–7 minutes until syrupy.
- To assemble, layer cheesecake filling between two waffles.
- Drizzle with strawberry topping and serve with whipped cream or powdered sugar if desired.
Notes
- Make sure the waffle maker is preheated for best results.
- For added flavor, consider adding a sprinkle of cinnamon to the batter.
