- 1 lb ground beef (80/20)
- 4 large flour tortillas
- 2 cups shredded cheddar cheese
- 1 medium onion (diced)
- 1/2 cup sliced pickles
- 2 tbsp ketchup (for sauce)
- 1 tbsp mustard (for sauce)
- Cooking oil (as needed)
Instructions
- In a skillet over medium heat, brown the ground beef for about 6-8 minutes, breaking it apart as it cooks. Drain excess fat.
- Add diced onion to the beef and cook until translucent (about 3 minutes).
- On one tortilla, sprinkle half of the shredded cheddar cheese. Layer cooked beef mixture and pickles on top, then add more cheese before folding it like a taco.
- In the same skillet, cook the folded quesadilla over medium heat until golden brown and crispy (approximately 3-4 minutes). Flip carefully to achieve a crust on both sides.
- Remove from heat and let sit for a minute before slicing into wedges.
- Drizzle with ketchup and mustard or serve on the side for dipping.
Notes
- Serve with extra sauce on the side for dipping.
- These quesadillas can be customized with additional ingredients such as jalapeños or bell peppers.
