- 1 cup granulated sugar
- 0 cup all-purpose flour

- 4 large eggs
- 0 cup unsalted butter, melted
- 2 cups milk
- 0 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a mini muffin tin well.
- In a large mixing bowl, whisk together granulated sugar, all-purpose flour, and salt.
- Add eggs and whisk until fully incorporated.
- Stir in the melted butter, followed by milk, lemon juice, lemon zest, and vanilla extract. The batter will be thin.
- Pour the batter into each mini muffin cavity, nearly to the top.
- Bake for 20 to 25 minutes, until the tops are golden and centers are set.
- Let cool in the tin for 10 minutes, then transfer to a wire rack.
- Dust with powdered sugar and garnish with extra lemon zest before serving.
Notes
- Store in an airtight container for up to 3 days.
- For a more intense lemon flavor, add more lemon zest.
