Description

A delicious shrimp fried rice recipe with vegetables and scrambled eggs, perfect for a quick meal.


Ingredients

  • 2 cups cooked jasmine rice
  • 1 lb shrimp (peeled and deveined)
  • 1 cup mixed vegetables (peas and carrots)
  • 3 green onions (chopped)
  • 2 cloves garlic (minced)
  • 2 eggs (whisked)
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil

Instructions

  1. Cook jasmine rice according to package instructions.
  2. In a skillet, cook shrimp until they turn pink, about 3-4 minutes.
  3. Push the mixture aside and scramble whisked eggs in the skillet until just set.
  4. Stir in cooled rice, soy sauce, and sesame oil; mix until heated through, about 2-3 minutes.
  5. Garnish with chopped green onions before serving warm.
