- 2 cloves garlic, finely chopped
- 1 thumb-sized piece fresh ginger, peeled and grated
- 1 liter chicken stock or vegetable stock
- 200 grams frozen vegetable or beef gyoza
- 1 tablespoon soy sauce
- 1 tablespoon low-sodium soy sauce (or tamari)
- 1 tablespoon rice vinegar
- 2 carrots, julienned
- 150 grams baby spinach
- 3 spring onions, thinly sliced
- 1 red chili, finely sliced (optional)
Instructions
- Sauté the aromatics – In a large pot, heat the sesame oil over medium heat. Add the garlic and ginger, and sauté for about 1-2 minutes until fragrant. This step builds the base of the soup and fills your kitchen with cozy, savory aromas.
- Build the broth – Pour in the chicken or vegetable stock, then stir in both kinds of soy sauce and rice vinegar. Bring everything to a gentle simmer. This is where the flavor magic starts to happen—the broth takes on a rich, umami depth that’s both comforting and bold.
- Add the dumplings – Gently add the frozen gyoza to the simmering broth. Let them cook for about 4–5 minutes, or according to the packet instructions. You’ll know they’re ready when they float to the top and become slightly translucent.
- Toss in the vegetables – Add the julienned carrots and let them simmer for another 2–3 minutes. Stir in the baby spinach just before serving so it wilts but still retains its vibrant green color.
- Garnish and serve – Ladle the soup into bowls, making sure each portion has a few gyoza and a generous amount of broth and veggies. Garnish with sliced spring onions and a few slices of red chili for a little heat, if desired.
