Description

A flavorful one-pot meal featuring tender chicken and fluffy rice, seasoned with aromatic spices.


Ingredients

  • 2 cups long-grain rice
  • 1 pound boneless, skinless chicken thighs (or breasts)
  • 4 cups chicken broth (Halal-certified)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • to taste salt and pepper
  • 2 tablespoons olive oil
  • to garnish fresh parsley, chopped

Instructions

  1. Cut the chicken into bite-sized pieces. Season with salt, pepper, turmeric, and cumin.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Toss in the minced garlic and sauté for another minute until fragrant.
  3. Add the seasoned chicken to the pot. Sauté until browned on all sides, about 6-7 minutes.
  4. Stir in the rice, ensuring it gets coated in the flavorful oils. Cook for another 2 minutes.
  5. Pour in the chicken broth, bringing it to a gentle boil. Then, reduce the heat to low.
  6. Cover the pot and let it simmer for about 20 minutes or until the rice is fluffy and has absorbed all the liquid.
  7. Fluff the rice with a fork and garnish with fresh parsley before serving.
