Description
A creamy and flavorful Cajun chicken pasta dish cooked in a slow cooker.

- 1 pound chicken breasts, cubed
- 2 tablespoons Cajun seasoning
- 3 cloves garlic, minced
- 1 small onion, chopped
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup chicken broth
- 1 cup heavy cream
- 4 ounces cream cheese
- 1/2 cup grated Parmesan cheese
- 12 ounces penne pasta
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Cube the chicken breasts and toss with Cajun seasoning until well coated.
- Add chicken, garlic, onion, and sun-dried tomatoes to the slow cooker. Pour in chicken broth.
- Cook on low for 4–5 hours or high for 2–3 hours, until chicken is fully cooked.
- Stir in cream cheese and heavy cream. Cover and cook for 20–30 minutes until the sauce is creamy and smooth.
- Meanwhile, cook penne pasta according to package directions until al dente. Drain and set aside.
- Add cooked pasta and Parmesan cheese to the slow cooker. Stir to combine and coat with the sauce.
- Serve hot, garnished with fresh parsley if desired.
Notes
- This recipe can be adjusted for spice levels by adding more or less Cajun seasoning.
- Feel free to add other vegetables for more nutrition.
