A delightful cherry whipped cream dessert that’s perfect for summer!

- 2 cups fresh cherries, pitted and halved
- 1 cup heavy whipping cream, cold
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 tbsp gelatin powder
- 2 tbsp cold water
- 1/4 tsp almond extract (optional)
Instructions
- Prepare the cherry topping by combining pitted and halved cherries with sugar in a saucepan over medium heat until softened.
- Sprinkle gelatin over cold water in a small bowl and then heat gently until dissolved.
- In a mixing bowl, whip cold heavy cream until soft peaks form. Gradually add powdered sugar and vanilla while continuing to whip until stiff peaks form.
- Gently fold the cooled gelatin mixture into the whipped cream using a spatula.
- Layer the whipped cream mixture with cherry topping in serving bowls or glasses.
- Chill for at least two hours before serving.
Notes
- This dessert can be made a day in advance.
- Feel free to adjust sweetness by adding more or less powdered sugar.
