Description

These delicious and healthy wheat bran muffins are perfect for breakfast or a snack.


Ingredients

Scale
  • 1 ½ cups wheat bran
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ⅔ cup packed brown sugar
  • ⅓ cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 cup buttermilk
  • ¾ cup raisins

Instructions

  1. Preheat oven to 425°F and grease 12 muffin cups or line with paper liners.
  2. In a large bowl, combine the wheat bran, flour, baking powder, and baking soda.
  3. In another bowl, whisk the brown sugar, oil, egg, vanilla extract, and salt vigorously for 1 minute until pale. Stir in the buttermilk.
  4. Pour the wet ingredients into the dry mixture and mix until JUST combined. Fold in the raisins.
  5. Spoon the batter into muffin cups, filling to about 2/3 of the way.
  6. Bake for 5 minutes at 425°F, then reduce the temperature to 350°F. Bake for another 14-16 minutes, until a toothpick inserted into the center comes out clean.

Notes

  • Make sure to not overmix the batter to keep the muffins fluffy.
  • Optional: Add nuts or other dried fruits for variation.
